Cooking Directions
Smash Burgers
Prepare the station: Smash burgers cook very quickly. Ensure that your buns, cheese, and toppings are ready before you turn on the stove.
Heat the pan: Place a heavy cast-iron skillet or griddle over high heat until it reaches a temperature of around 450-500°F. Do not add oil to the pan; the beef should stick slightly to create a crust.
Place the beef: Position your meatballs on the hot surface, ensuring they are spaced apart.
Smash firmly: Cover the meatball with a piece of parchment paper and use your spatula or press to firmly and evenly smash the meat down. Hold it in place for a few seconds to ensure it is completely flattened.
Season: Remove the parchment paper and generously season the exposed patty with salt and pepper.
Sear: Allow the burger to cook undisturbed for 60 to 90 seconds until a rich, brown crust develops on the bottom. Scrape and flip: Utilize a stiff spatula or bench scraper to carefully lift the patty, ensuring the crispy crust remains intact. Flip the patty over. Add cheese: Immediately place a slice of cheese on top of the flipped patty. (For a double burger, add a second patty directly on top of the cheese). The cheese should melt within approximately 30 seconds.
Serve: Remove from the pan, place it on your toasted bun, and enjoy right away.

To ensure a juicy burger, it is essential to handle the ground beef delicately to avoid creating a dense texture. Form patties that are 1 inch thick, make a slight “dimple” in the center, and season the outer surface generously with Rebec Valley Farm’s Smash Burger Seasoning immediately before cooking.
