Cooking Directions
Step 1: The Prep (Essential for Crispiness)
Dry Completely: Use paper towels to blot away all moisture from the skin. Wet skin causes the wings to steam instead of crisping up.
Add Baking Powder: Toss the wings lightly with 1 tsp of baking powder per pound of wings. This raises the skin’s pH level and breaks down proteins, resulting in a blistered, crispy exterior (you won’t taste it).
Oil the Wings: Toss the wings in 1–2 tbsp of neutral oil (like canola or vegetable) so the seasonings adhere evenly.
Step 2: The Seasoning
Apply Rebec Valley Farm Prairie Fire Buffalo Wing Seasoning or Scorching Buffalo Wing Seasoning generously to the oiled wings.
Step 3: Cooking Methods
Oven-Baked (Crispiest): Preheat your oven to 425°F. Place a wire rack over a baking sheet (sprayed with non-stick oil) and arrange the wings in a single layer. Bake for 45–50 minutes, flipping halfway through, until crispy and golden brown.
Air-Fried: Preheat the air fryer to 400°F. Arrange wings in a single layer (don’t overcrowd). Cook for 10 minutes, flip, and cook for another 6–8 minutes until cooked through.
Deep-Fried: Heat neutral oil to 375°F. Fry the wings in batches for 8–12 minutes until they float and are deeply golden and crispy.
Step 4: Finishing Touches
Resting: Remove the wings from heat and let them rest on a wire rack for 5 minutes before serving or tossing in sauce.
Sauce or Dry: If you are tossing them in a wet sauce (like buffalo or your favorite hot sauce), do it after cooking so the skin stays crispy. If you are eating them dry, you can sprinkle a little extra Rebec Valley Farm Wing Seasoning right after cooking.
